Steps to Make Marshmallows
Prepare the Gelatin: In a small bowl, combine ½ cup of water with the gelatin. Let it sit for about 10 minutes to bloom.
Cook the Sugar Mixture: In a saucepan, combine the remaining ½ cup of water, granulated sugar, corn syrup, and salt. Stirring constantly, cook over medium heat until the sugar melts. Once dissolved, stop stirring and allow the mixture to boil until it reaches 240°F (115°C) on a candy thermometer.
Combine Mixtures: Once the sugar mixture reaches the desired temperature, remove it from heat. Carefully pour the hot syrup into the bloomed gelatin while mixing continuously with a hand mixer or stand mixer.
Whip the Mixture: Increase the mixer speed to high and whip the mixture for about 10-12 minutes until it becomes thick, fluffy, and forms stiff peaks. Add the vanilla extract during the last minute of whipping.
