Triple-Layer Fruit Pops

For the Strawberry Layer:
1 cup fresh strawberries, hulled
2 tablespoons water
For the Blueberry Layer:
1 cup fresh blueberries
2 tablespoons honey or sugar (optional)
2 tablespoons water
For the Mango Layer:
One cup of fresh mango chunks, or around one ripe one
2 tablespoons honey or sugar (optional)
2 tablespoons water
Directions:
1. Prepare the Strawberry Layer
In a blender, combine strawberries, honey (if using), and water. Blend until smooth. Pour the mixture into the popsicle molds, filling them about one-third of the way. Place the molds in the freezer for about 30 minutes, allowing the layer to set slightly before adding the next.
2. Create the Blueberry Layer
Rinse out the blender and add blueberries, honey, and water. Blend until smooth. Gently pour the blueberry mixture over the strawberry layer, filling the molds another third of the way. Make sure the popsicle sticks are centred when you insert them into the moulds. Put the moulds back in the freezer for a further half hour.
3. Add the Mango Layer
Rinse the blender once more and blend the mango chunks with honey and water. Pour the mango mixture on top of the blueberry layer, filling the molds to the brim. The popsicles should be frozen for four to six hours, or until they are fully solid.
4. Unmold and Serve
Run the molds under warm water for a few seconds to soften them up so you can remove the popsicles. To release the popsicles, gently tug on the sticks.
